However, two major influences in her profession were George Perry-Smith, who she worked for at Riverside in Helford, and Joyce Molyneux, one of the first women to receive a Michelin Star, who she worked under at what was called \u2018The Carved Angel\u2019 in Dartmouth.<\/p>\n<p>Watch the video below to hear Jane Baxter, Nathan Outlaw and celebrity chef <a href=\"https:\/\/www.mitchtonks.co.uk\/\" target=\"_blank\" rel=\"noopener noreferrer\">Mitch Tonks<\/a> speak with the highly influential Joyce Molyneux at <a href=\"https:\/\/www.seahorserestaurant.co.uk\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Seahorse<\/a> restaurant, <a href=\"https:\/\/www.coastandcountry.co.uk\/dartmouth.html\" target=\"_blank\" rel=\"noopener noreferrer\">Dartmouth<\/a>.<\/p>\n<p><iframe src=\"https:\/\/www.youtube.com\/embed\/A-D_D-BbKrU\" width=\"100%\" height=\"480\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><span data-mce-type=\"bookmark\" style=\"width: 0px; overflow: hidden; line-height: 0;\" class=\"mce_SELRES_start\">\ufeff<\/span><\/iframe><\/p>\n<p>From The Carved Angel in Dartmouth to <a href=\"https:\/\/rivercafe.co.uk\/\" target=\"_blank\" rel=\"noopener noreferrer\">The River Caf\u00e9<\/a> in London, Jane began exploring Italian cuisine, which kicked off her love of all things Italiano. After cooking up a storm in many London establishments, Jane jetted off to the South Pacific for seven years. When Jane returned to the UK, she worked at <a href=\"https:\/\/www.coastandcountry.co.uk\/blog\/riverford-south-devon\" target=\"_blank\" rel=\"noopener noreferrer\">Riverford<\/a> in <a href=\"https:\/\/www.coastandcountry.co.uk\/buckfastleigh-holiday-cottages.html\" target=\"_blank\" rel=\"noopener noreferrer\">Buckfastleigh<\/a>. Riverford is an organic farm, which later opened a popular restaurant for those that love seasonal feasting \u2013 think simple, colourful dishes cooked and seasoned beautifully. The people responsible for the perfectly effortless, indulgent meals and friendly service at the \u2018<a href=\"https:\/\/fieldkitchen.riverford.co.uk\/\" target=\"_blank\" rel=\"noopener noreferrer\">Field Kitchen<\/a>\u2019 were Jane Baxter and event planner, Samantha Miller.<\/p>\n<h2>Jane Baxter\u2019s restaurant, Wild Artichokes<\/h2>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-28725\" src=\"https:\/\/www.coastandcountry.co.uk\/blog\/wp-content\/uploads\/sites\/6\/2020\/08\/Wild-Artichokes-owned-by-Jane-Baxter.jpg\" alt=\"Wild Artichokes, owned by Jane Baxter\" width=\"930\" height=\"480\" \/><\/p>\n<p>Following their 5 years working together at Riverford, Jane and Sam now run the popular <a href=\"https:\/\/www.coastandcountry.co.uk\/kingsbridge.html\" target=\"_blank\" rel=\"noopener noreferrer\">Kingsbridge<\/a> based food and events company, Wild Artichokes. Jane cooks, using local produce wherever possible, and Sam organises events. This bustling eatery is a haven for those that love grazing boards, overflowing salads and honest food in a friendly, sociable dining environment. However, if you prefer a more private affair for a special occasion, the team also offer <a href=\"https:\/\/www.coastandcountry.co.uk\/blog\/best-catering-companies-in-south-devon\" target=\"_blank\" rel=\"noopener noreferrer\">private catering experiences<\/a> too, so you can enjoy feasting on delicious local produce in the comfort of your holiday home, or local event venue. Inspired by Mediterranean cooking, Jane is the co-author of <a href=\"https:\/\/leon.co\/bookshop\/fast-and-free\/\" target=\"_blank\" rel=\"noopener noreferrer\">Fast &amp; Free<\/a> and <a href=\"https:\/\/leon.co\/bookshop\/fast-vegetarian\/\" target=\"_blank\" rel=\"noopener noreferrer\">Fast Vegetarian<\/a>, encouraging budding chefs with little time to get cooking something utterly delicious.<\/p>\n<h2>Jane Baxter recipes<\/h2>\n<p>When we created our <a href=\"https:\/\/www.coastandcountry.co.uk\/blog\/wp-content\/uploads\/sites\/6\/2019\/02\/SouthDevonCookBookOnline.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">South Devon Cookbook<\/a>, a downloadable resource with recipes and tips from some of the region\u2019s leading chefs, we were lucky enough to have Jane Baxter share some delicious recipes, including her Baxter\u2019s Brunch and Paella Deli Salad. Set in the backdrop of one of our luxury holiday cottages at Hillfield Village, we discussed all things cooking with Jane.<\/p>\n<p><strong>What is your favourite South Devon produce?<\/strong><\/p>\n<blockquote><p>First, definitely crab. And not just the white meat, I really love the brown meat to work with as well.\u00a0 We also have some great veg suppliers to work with in the region. There is a great \u2018pick your own\u2019 in Yealmpton that grows lovely things throughout the summer. Thirdly, we get some lamb from the village farm at East Portlemouth that is quite a rare breed, and is accessible via the food assembly which helps small producers.<\/p><\/blockquote>\n<p><strong>Do you have any advice for people that are new to cooking?<\/strong><\/p>\n<blockquote><p>Cooking is all about confidence. People see TV chefs and it can look quite daunting and technical, but it doesn\u2019t have to be. If you are baking I think you need to follow a recipe as its more of a science, but if you are cooking a meal like I am now then just season things properly, keep tasting and seasoning, and don\u2019t be afraid. Everyone messes up!<\/p><\/blockquote>\n<p><strong>How did the idea of your Wild Artichokes restaurant come about?<\/strong><\/p>\n<blockquote><p>Wild Artichokes started because I really wanted a kitchen to cook from. I was trying to do things from home and it wasn\u2019t working, so I thought about the idea of getting a kitchen with a venue where people could come and eat. We are still doing outside catering, but I love also having a multi-functional space where people can come and have a meal.<\/p><\/blockquote>\n<p><strong>What do you love most about your job?<\/strong><\/p>\n<blockquote><p>What I really like about my job is the variety of things that we do in Kingsbridge and throughout the South Hams. I can cook an Italian dinner for 32 people and put lots of creativity into it, or we can do a wedding in a field for 200 people.
