However, this vibrant soup is fresh and light &#8211; with a luxurious buttery scallop and contrasting saltiness from the crispy Prosciutto. It\u2019s versatile, too. Substitute the scallop for a poached egg, herb oil or a swirl of cream and some croutons.<\/span><\/p>\n<p>This soup is being served as part of a British themed meal created by local caterer, Hearty Food.\u00a0<span class=\"tm7\">For more sample menus and further information visit the <a href=\"https:\/\/www.heartyfood.co.uk\" target=\"_blank\" rel=\"noopener\">Hearty Food website<\/a>.\u00a0<\/span><\/p>\n<\/div>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong><span class=\"tm6\">For the soup<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"tm7\">2 tbsp olive oil<\/span><\/li>\n<li><span class=\"tm7\">2 small onions, finely chopped<\/span><\/li>\n<li><span class=\"tm7\">1 celery stick, finley chopped<\/span><\/li>\n<li><span class=\"tm7\">2 garlic cloves, grated<\/span><\/li>\n<li><span class=\"tm7\">2 bay leaves<\/span><\/li>\n<li><span class=\"tm7\">2 medium potatoes (about 400g), peeled and cut into small chunks<\/span><\/li>\n<li><span class=\"tm7\">1.5 litres of veg stock<\/span><\/li>\n<li><span class=\"tm7\">170g watercress<\/span><\/li>\n<\/ul>\n<p><strong><span class=\"tm6\">For the scallops<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"tm7\">1 tbsp rapeseed oil and knob of butter<\/span><\/li>\n<li><span class=\"tm7\">2 pieces Prosciutto <\/span><\/li>\n<li><span class=\"tm7\">4 large or 8 small scallops<\/span><\/li>\n<li>Sea salt &amp; pepper<\/li>\n<\/ul>\n<div><strong>Method:<\/strong><\/div>\n<ul class=\"tm10\">\n<li class=\"tm11\"><span class=\"tm7\"><span class=\"tm7\">Heat a large saucepan over a low-medium heat. Add the oil, onion and celery with a small pinch of salt. Gentlhy sweat for 20 or so minutes, stirring now and then, until really soft, but not coloured. The longer you sweat the veg, the more flavour. Turn the heat down or add a splash of water, if it starts to catch.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\"><span class=\"tm7\">Stir in the garlic and bay leaves. Continue cooking for a few minutes.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\"><span class=\"tm7\">Add in the potatoes, stock and a pinch of salt and pepper. Bring up to the boil and simmer for 15-20 minutes, or until the potatoes are really soft.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\">Discard the bay leaves then stir in the watercress. Remove from the heat. The watercress should wilt fairly quickly.<br \/>\n<\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\"><span class=\"tm7\">Transfer to a blender and blitz until smooth. Put back into the saucepan, taste and adjust the seasoning. Pop a lid on to keep warm while you cook the Prosciutto and scallops.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\">Heat a non-stick frying pan over a medium-high heat. When hot, add a drizzle of oil. Add the Prosciutto and fry on both sides for about 1 minute each side, until turning golden and crispy. Remove and lay onto some kitchen paper. <\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\"><span class=\"tm7\">Pat dry the scallops and season both sides well with sea salt and pepper. When the pan is nice and hot add the oil. Place the scallops in, flat side down. Depending on the size, cook for approx. 1-2 minutes undisturbed. Flip over, add the butter and cook for 1-2 minutes more, basting with the butter.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\"><span class=\"tm7\">Remove the scallops immediately from the pan. They should be springy to touch.<\/span><\/span><\/li>\n<li class=\"tm12\"><span class=\"tm7\">Serve the soup in bowls with the scallop on top.
