Hearty Food | Watercress soup with pan-fried scallop & crispy Prosciutto recipe

Hearty Food soup recipe

This is such a simple and delicious recipe, that’s perfect as a starter or a lunch. Soup can often be quite filling so it’s not always a go-to choice for a starter. However, this vibrant soup is fresh and light – with a luxurious buttery scallop and contrasting saltiness from the crispy Prosciutto. It’s versatile, too. Substitute the scallop for a poached egg, herb oil or a swirl of cream and some croutons.

This soup is being served as part of a British themed meal created by local caterer, Hearty Food. For more sample menus and further information visit the Hearty Food website

For the soup

  • 2 tbsp olive oil
  • 2 small onions, finely chopped
  • 1 celery stick, finley chopped
  • 2 garlic cloves, grated
  • 2 bay leaves
  • 2 medium potatoes (about 400g), peeled and cut into small chunks
  • 1.5 litres of veg stock
  • 170g watercress

For the scallops

  • 1 tbsp rapeseed oil and knob of butter
  • 2 pieces Prosciutto
  • 4 large or 8 small scallops
  • Sea salt & pepper
  • Heat a large saucepan over a low-medium heat. Add the oil, onion and celery with a small pinch of salt. Gentlhy sweat for 20 or so minutes, stirring now and then, until really soft, but not coloured. The longer you sweat the veg, the more flavour. Turn the heat down or add a splash of water, if it starts to catch.
  • Stir in the garlic and bay leaves. Continue cooking for a few minutes.
  • Add in the potatoes, stock and a pinch of salt and pepper. Bring up to the boil and simmer for 15-20 minutes, or until the potatoes are really soft.
  • Discard the bay leaves then stir in the watercress. Remove from the heat. The watercress should wilt fairly quickly.
  • Transfer to a blender and blitz until smooth. Put back into the saucepan, taste and adjust the seasoning. Pop a lid on to keep warm while you cook the Prosciutto and scallops.
  • Heat a non-stick frying pan over a medium-high heat. When hot, add a drizzle of oil. Add the Prosciutto and fry on both sides for about 1 minute each side, until turning golden and crispy. Remove and lay onto some kitchen paper.
  • Pat dry the scallops and season both sides well with sea salt and pepper. When the pan is nice and hot add the oil. Place the scallops in, flat side down. Depending on the size, cook for approx. 1-2 minutes undisturbed. Flip over, add the butter and cook for 1-2 minutes more, basting with the butter.
  • Remove the scallops immediately from the pan. They should be springy to touch.
  • Serve the soup in bowls with the scallop on top. Scatter the crispy Prosciutto to garnish along with a drizzle of extra virgin olive oil. Enjoy!
